Adding a little smoke to the fiery culinary scene of Portland, Oregon, Kim Jong Smokehouse, Smokehouse Tavern and Smokehouse Provisions’ Executive Chef BJ Smith has spent most of his life harnessing the craft of flavour development in fine dining.
Starting in his family’s South Bend, Indiana restaurant, Chef Smith went on to graduate from Portland’s Western Culinary Institute, landing him in critically-acclaimed kitchens including Citrus (Los Angeles), Le Bernadin (New York) and Gotham Bar & Grill (New York).
