Black Olives are processed in the same manner as green olives but are subjected to a further process known as oxidation. Green olives after being cured are placed in large tanks into which air is injected causing the olives to turn black.
Add to salads, pastas, dips or use as a garnish. Black olives work great in Mediterranean dishes. No preparation necessary, use as recipes calls for.
