Ingredients
Thai Meatballs | Serves 4
- 1 pound (500 grams) Pork, Ground
- 1 tbsp (15 milliliters) Lemongrass, Minced
- 1 tsp (5 milliliters) Ginger, Minced
- 3 cloves Garlic, Fresh, Minced
- 2 tsps (10 milliliters) Club House ® Thai Style Chili Flakes
- 1/4 cup (60 milliliters) Chopped Fresh Cilantro Leaves
- 1 tsp (5 milliliters) Sugar
- 2 tbsps (30 milliliters) Fish Sauce
- 3/4 cup (160 milliliters) Panko Breadcrumbs
- 1 each Egg
Thai Chili Sauce Glaze | Serves 4
- 1/2 cup (125 milliliters) Franks ® Sweet Chili Sauce
- 1/4 cup (60 milliliters) Soy Sauce
- 2 tbsps (30 milliliters) Billy Bee Liquid Honey
- 2 tbsps (30 milliliters) Rice Vinegar
- 2 tsps (10 milliliters) Fish Sauce
- 1 tsp (5 milliliters) Club House ® Thai Style Chili Flakes
- 1 tbsp (15 milliliters) Fresh Lime Juice
Coconut Rice | Serves 4
- 14 oz (400 grams) Thai Kitchen Coconut Milk
- 1 1/4 cups (310 milliliters) Water
- 1 tsp (5 milliliters) Granulated Sugar
- 1/8 tsp (1 milliliter) Salt
- 1 1/2 cups (375 milliliters) Jasmine Rice
Procedure
Thai Meatballs:
- Heat oven to 205°C (400°F). Place Thai Meatball ingredients in bowl; mix well. Scoop using #40 scoop (1 ½ tbsp.) and place on wire rack set over a sheet pan. Spray meatballs generously with cooking spray.
- Bake meatballs 15 to 20 minutes or until lightly browned and internal temperature reaches 70°C (160°F). Hold hot for service
Thai Chili Sauce Glaze:
- In a small saucepot, combine all ingredients and bring to a boil. Reduce to a simmer and allow to cook until slightly thickened. Hold sauce warm.
Coconut Rice:
- In a medium pot, combine coconut milk, water, sugar, and salt. Bring to a simmer till sugar is dissolved.
- Add rice. Bring to boil; reduce to simmer and cover. Cook 18 minutes. Remove from heat and let stand 5 minutes before fluffing with a fork. Hold warm.
Service:- Add glaze to warm meatballs and stir to combine. Serve glazed meatballs over bed of coconut rice.
