Procedure
- Pre-soak kidney beans for 24 hours, rinse under cold water, reserve.
- Melt butter and sauté onions, double smoked bacon on medium low heat for 10 minutes.
- Add kidney beans, Club House Tex Mex Seasoning and diced tomato, sauté for another 2 to 3 minutes.
- Add Cattlemen’s Kentucky Bourbon BBQ Sauce, sauté for 1 minute
- Add vegetable cooking stock, bring to a simmer, cover and place in oven for 90 minutes.
- Remove from oven, reduce sauce if required, garnish with chopped parsley.
