Tender kidney beans simmered in Bourbon BBQ Sauce, served extra-smoky with double smoked ham, red onion, and tomato.

- 2 tbsps (30 milliliters) Butter, unsalted
- 7 tsps (35 milliliters) Cattlemens ® Cowboy Rub
- 1 cup (250 milliliters) Yellow Onion, finely chopped
- 1 cup (250 milliliters) Double Smoked Ham, diced 1/4-inch (1/2-cm)
- 3 cups (750 milliliters) Red Kidney Beans, soaked and rinsed
- 1 cup (250 milliliters) Roma Tomato, seeded and diced 1/4-inch (1/2-cm)
- 6 tbsps (90 milliliters) Cattlemens ® Kentucky Bourbon™ BBQ Sauce
- 32 oz (1 liter) Vegetable Stock
- 2 tbsps (30 milliliters) Parsley, finely chopped
Procedure
Prep
- Preheat oven to 400°F (200°C).
- Melt butter; sauté onions and ham on medium-low heat for 10 minutes.
- Add kidney beans, Cattlemen’s Cowboy Rub, diced tomato and sauté for another 2 to 3 minutes.
- Mix in Cattlemen’s Bourbon BBQ Sauce, sauté for 1 minute.
- Add vegetable stock, bring to a simmer, cover and place in oven for 90 minutes.
- Remove from oven, reduce sauce if necessary. Keep warm for service.
Service
- Ladle beans into crock or bowl, garnish with chopped parsley.
