For Fish: Combine lemon juice, Caribbean Jerk Seasoning, curry powder, 2 Tbsp. oil, and Ground Ginger in mixing bowl. Blend until uniform. Place rockfish in glass baking dish and cover evenly with marinade. Allow to marinate 1 hour. Bake in 400°F oven for 15 minutes, until internal temperature reaches 145°F. Heat 1 tablespoon oil in pan. Sauté onions and bell peppers over high heat for approximately 1 minute. Add pineapple, Lemon Pepper Seasoning, and remaining oil. Sauté 1 minute more.
Serve fish immediately, with salsa over top.
For Garlic Flavoured Oil:Place ingredients in a saucepan and warm oil to about 200°F (95°C). Remove from heat and let steep for 1 hour. Strain garlic using a kitchen sieve or cheesecloth. Store as you would normally store oils. Use as desired.
