They are the dried, unopened, nail shaped flower buds of the evergreen Syzygium aromaticum. Reddish brown in colour, they have a very strong, aromatic flavour and aroma. The flavour is strong yet sweet almost hot. Their flavour is one of the most penetrating of all spices and their bitter, astringent flavour leaves a numbing sensation in the mouth.
