They are the dried, unopened, nail shaped flower buds of the evergreen Syzygium aromaticum. Reddish brown in colour, they have a very strong, aromatic flavour and aroma. The flavour is strong yet sweet; almost hot. Their flavour is one of the most penetrating of all spices and their bitter, astringent flavour leaves a numbing sensation in the mouth.
