Cinnamon Sticks are the inner bark of an evergreen tree belonging to the genus Cinnamonmum. The bark is peeled from young shoots of the tree biannually. It is the most important baking spice. Distinctively sweet, earthy, mildly pungent and spicy.
Cinnamon Sticks are used to flavour beverages such as tea, coffee, hot chocolate and cider. They can also be used in stewed fruit of fruit compotes; use with rhubarb, custard sauce, and spiced peaches.
