Sweet Potato Salad | Club House for Chefs

A wholesome, chilled sweet potato salad laced with orchard fruits and dressed in a creamy blend of yogurt, Cattlemen's® Carolina Tangy Gold™ BBQ Sauce and Club House La Grille® Brown Sugar Bourbon Seasoning.

3 pounds (1500 grams) Sweet Potatoes, Fresh, Skin On, Scrubbed Clean
1/4 cup (60 milliliters) Dried Apples, 1/4” (1/2-cm) Dice
1/4 cup (60 milliliters) Dried Apricots, 1/4” (1/2-cm) Dice
1/4 cup (60 milliliters) Golden Raisins
1/2 cup (125 milliliters) Cattlemens ® Carolina Tangy Gold™ BBQ Sauce
1/2 cup (125 milliliters) Greek Yogurt, 5% Milk Fat
1 1/2 tsps (7 milliliters) Club House La Grille ® Brown Sugar Bourbon Flavoured Seasoning

Procedure

Prep

In lightly salted water, boil sweet potatoes until fork tender. Peel and dice.
Dice apples and apricots. Add the golden raisins to bowl and rehydrate with hot water. Drain and add to potatoes.
Blend Cattlemen’s BBQ sauce with yogurt and Brown Sugar Bourbon seasoning. Fold into potatoes.
Hold chilled for service.
