Prepare quinoa according to package directions using chicken stock instead of water. Let cool. In a large bowl combine remaining ingredients with quinoa except chicken breast. Butterfly cut each chicken breast place 1 tbsp of quinoa mixture in centre of breast and fold over. Heat oil in a large pan on medium-high heat. Sear chicken breast until golden in colour. Place chicken onto baking sheet and cook in preheated 350°F oven until an internal temperature of 165°F is reached.
