Ingredients
Serves 24
45 ml (125 milliliters) Light olive oil
250 ml (750 milliliters) Chopped fennel bulb
250 ml (750 milliliters) Chopped carrots
500 ml (1 1/2 liters) Cooked chickpeas
500 ml (1 1/2 liters) Uncooked rice
1 liter (3 liters) Chicken or vegetable stock
105 ml (300 milliliters)

Procedure
In large saucepan, heat olive oil over medium heat. Add fennel bulb and carrots and sautéed 5 minutes. Add chickpeas, rice, stock and seasoning. Cover and bring to boil. Reduce heat to low and simmer 20-25 minutes or until rice is tender.
