1. In a sauce pan over medium high heat combine sugar and water. Bring to a boil and cook until deep golden brown. Remove from heat.
2. In a bowl gently mix together heavy cream, miso, and vanilla just until miso begins to dissolve. Add to pan with caramelized sugar and return to stove over medium heat. Whisk until fully incorporated and remove from heat immediately. Cool and hold refrigerated until needed.
