In a sauce pot combine water, ginger root, mint, honey, lemon zest, Cooling Spice Blend, and saffron. Bring to a boil, reduce heat and simmer 5 minutes. Remove from heat and allow to steep for at least 10 minutes.
Pass through a coffee filter or cheesecloth and allow to cool. Hold refrigerated for service.
For each serving, fill desired glass with ice. Top with 8 ounces of tea and garnish as desired.
