Why fresh, natural flavours are fundamental in Montreal

In the wonderfully vibrant city of Montreal, there is an endless array of culinary experiences to enjoy and flavours to sample.

According to a local chef, one of the most important aspects of this unique destination’s dining scene is the focus on serving up a range of dishes and tastes incorporating fresh, local products.

National Geographic Traveller recently reported on some of the gastronomic highlights of Montreal, including the bistro at the recently opened Strom Spa Nordique, which serves everything from Asian-inspired marinated sturgeon to Mexican-style vegan tempeh chili.

Head chef Raphael Podlasiewicz said: “We’re trying to bring the outside inside, so we use seasonal products and sustainably sourced meat and fish. People want to know where their food comes from.”

Of course, Montreal is also steeped in French and European culture, meaning local dining establishments take pride in serving up foods that represent the city’s history.

Francois Pellerin, the owner of Le Garde-Manger de François bakery and cafe in the Chambly suburb, said a well-made croissant allows visitors to “taste the land and our heritage” in just one bite.
