Combine seasoning olive oil and vinegar. Put beans onion and peppers in large roasting pan. Add dressing tossing to coat vegetables. Bake in preheated oven at 400°F (200°C Gas Mark 6) for 25 minutes stirring halfway through until tender crisp. If desired sprinkle each serving with mozzarella cheese.
