Ingredients
Greek Paste | Serves 24
- 250 ml Greek Seasoning510 GR
- 105 ml Hot water
- 45 ml Vegetable oil
Sandwich | Serves 24
- Olive oil
- Greek paste (recipe below)
- 8 slices (24 slices) Lengthwise eggplant
- 8 slices (24 slices) Lengthwise zucchini
- 8 slices (24 slices) Tomato
- 8 slices (24 slices) Italian bread
- 1 pieces Feta cheese crumbled
- pinch Alfalfa sprouts
Procedure
- For Sandwich: Brush olive oil over eggplant zucchini and tomato slices. Spread Greek Paste on both sides. Grill 3-4 minutes per side.
- For Greek Paste: Mix seasoning and hot water until a paste is formed. Let stand 20 minutes. Stir in vegetable oil. Store in sealed container in refrigerator for up to one week.Plating Instructions: To serve place eggplant slice on toasted bread and top with zucchini slice then tomato slice. Garnish with feta cheese and alfalfa sprouts.Chefs Tip:Use Greek Paste in sauces marinades and dressings. Perfect as a baste or rub. Quick and delicious in pasta toss. Whip into butter and serve with fresh breads and steamed vegetables. Excellent in stir-fries.
