In a sauce pan combine the water thyme and sugar. Bring to a boil over med-high heat. When the sugar has completely dissolved remove from the heat and let the syrup cool. In a bowl combine the simple syrup and lemon juice. Whisk to combine and refrigerate until chilled. Pour the sorbet base in an ice cream maker and freeze.
