Chef Jonathan Viau joined The Auld Spot/Sand and Pearl in early January. Attracted to the warm atmosphere and vibe where he brought a refined approach to casual dining. When COVID -19 hit he rallied and pivoted quickly to do whatever was necessary to save the restaurant in a time of crisis. Chef Viau began a take-out program as well as a gourmet boutique pub shop with interesting and unique fare to offer our guests.
Prior to that Chef Jonathan Held the position of Executive Chef at The Carbon Bar. There he brought a fine dining approach to southern American classics and traditional barbeque, implementing modernist techniques to bring innovative plates to a cuisine rich in tradition.
Chef Jonathan joined The Distillery Restaurant Corp. in 2011 as a cook in the Pure Spirits kitchen. He moved his way up to where he held the position of Chef de Cuisine. Pure Spirits Oyster House & Grill has been continually recognized as one of the Best Seafood Restaurants in the city. Chef Viau himself was the winner of Norcliff Farms 2013 competition ‘So You Think You Can Cook’. Under Chef Viau’s leadership, Pure Spirits was named the 2017 Best Seafood Restaurant in Toronto by Top Choice Awards.
