Greek Rice Pilaf

Ingredients Quantities
Light olive oil 45 mL
Chopped fennel bulb 250 mL
Chopped carrots 250 mL
Cooked chickpeas 500 mL
Uncooked rice 500 mL
Chicken or vegetable stock 1 L
Greek Seasoning 510 g 105 mL


In large saucepan heat olive oil over medium heat. Add fennel bulb and carrots and sautéed 5 minutes. Add chickpeas rice stock and seasoning. Cover and bring to boil. Reduce heat to low and simmer 20-25 minutes or until rice is tender.
